During the colder months, I tend to gravitate towards eating rich and hearty comfort foods. At the same time, I want to eat healthy. In this post, I want to share with you a handful of recipes that I consistently make that check all the boxes.

Red Lentil Curry (Rainbow Plant Life)

This is an easy recipe packed with lots of flavor. I leave out the almond butter and mix in about half the amount of coconut milk just to be mindful of calories.

I find this recipe really versatile as I’ve definitely subbed some of the veggies when I’ve prepared this dish. I love a warm salad to switch things up a little and definitely a great way to get tons of veggies.

My Favorite Detox Salad (Eat Yourself Skinny)

I’m not a fan of the name of this salad but I definitely think this is the healthiest salad you’ll ever eat. I always end up doubling up the ingredients for the dressing. I just find the salad tastes a lot better this way.

Chipotle Roasted Butternut Squash and Black Beans (Wandering Chickpea)

I recently came across this recipe and have made it several times since. I love eating it over white rice and a half sliced avocado.

Vegan White Bean and Kale Soup (Running on Real Food)

The ingredients are pretty basic so I was a little worried this soup would lack flavor. I was very wrong. The lemon juice really brings the whole thing together.
